IVY GOURD FRY(KOVAKKAI FRY)

     Today's recipe is kovakkai fry or ivy gourd fry is a simple recipe prepared within 15 minutes.  It will go very well with rice and chappati.  The scientific name of ivy gourd is "COCCINIA".   This vegetable mostly found in Sub-Saharan africa and some regions in Asia.  We can simply eat this fruit also which will be good to eat.  The leaves ,root and fruits are used for medicine purposes ,Mainly for Diabetes.

 


Ingredients:

  • Oil - 2 tbspn
  • Mustard Seeds - 1/4 tspn
  • Cumin seeds - 
  • Garlic - 5 cloves
  • Onion - 1(sliced)
  • Tomato - 1 (chopped)
  • Capsicum - 1 (chopped)
  • Ivy gourd - 1cup (Roughly chopped) 
  • Turmeric Powder - 1/4 tspn
  • Chilli Powder - 1 tspn
  • Coriander Powder - 1 tspn
  • Salt - as per taste
  • Split Chickpeas - 1 tbspn
  • Red Chilli - 2

Preparation:

  1. First  Dry roast the split chickpeas and red chilli for a minute in a lower flame and grind them to fine powder.
  2. In another pan , add oil.Once hot add mustard seeds,Cumin Seeds,sliced garlic and onion.Saute it for about 5 minutes.
  3. Then add  green peas ,sliced capsicum , ivy gourd and chopped tomatoes .Cook until tomatoes becomes mushy and vegetables becomes soft.
  4. Once cooked add the salt chilli powder,Coriander powder and Turmeric Powder.While adding Masalas keep the flame to be very low.
  5. Finally add the Preapred masala and cook well.If it is dry then sprinkle some water and close the lid and cook for 6-7 minutes.
  6. If all the vegetables cooked completly then turn off the flame and transfer to the bowl and serve.

1.Dry roast the split chickpeas and red chilli till it turns golden brown.Let it cool for few minutes and grind them to a fine powder.



2. Heat a pan with oil once hot add mustard seeds, cumin seeds and sliced garlic and saute for a minute.


 









3.Then add sliced onion , Capsicum, green peas, tomatoes and ivy gourd .Saute it for about 3 - 4 minutes.



























4.Reduce the flame to the low then add all the masalas and mix well.






















5. If it is dry sprinkle some water and close the lid. Then cook for about 8 to 10 mints.







6. When oil begins to separate it is Ready to serve and enjoy it with white rice or chappathi .
