ZARDA SWEET RICE
HI FRIENDS,,, This post is about how to make Zarda Sweet Rice. Zarda means yellow in "Arabic" Zarda rice is prepared by boilling the rice with sugar, food colour and flavoured with ghee, dry fruits and nuts. The cusine is south Asian. It is served as special dish for guest at banqets. Also at pakistan they use different food colours to prepare rice. Here i had used orange food colour to prepare Zarda Rice.
Cooking time for this recipe is 30 minutes. If you want quick sweet to serve for banquet then try this recipe. As we are adding ghee, dry fruits and nuts it will give rich flavour to this dish. INGREDIENTS :
Basmati rice - 1 cup
Water - 1 cup
Food colour - 1spn
Ghee - 2 tbspn
Cashews - 2tspn
Badam - 2tspnn
Pista - 2tspn
Raisins - 2tspn
Sugar - 1cup
Cardamom - 2
Salt - 1 pinch
PREPARATION :
1. Boil one cup of water and add orange food colour and cardamom pods to it.
2. Now add cleaned and washed Basmati rice to it. Cook the rice until it is 3/4th cooked. Do not overcook.
3. Strain the rice and keep it aside.
4. In a pan add ghee and roast the cashews, Raisins and Badam until turns golden brown.
5. In the same pan add the cooked basmati rice and add ghee to it. And add the roasted dry fruits and nuts.
6. Close the lid and cook for five minutes. If it is not done then cook for few more minutes.
7. Finally, Zarda Sweet Rice is ready to be served.
